Homemade potato wedges make a healthy alternative to fried chips. Not only are they better for you but they are quick and easy to make too!
This recipe serves 4.
Ingredients:
1kg potatoes
2tbsp olive oil
salt & pepper
Method:
Preheat the oven to 200ºC/400ºF/Gas Mark 6.
Line a baking tray with greaseproof paper.
Wash the potatoes and pat lightly dry using a clean tea towel.
Leaving the skin on, slice into wedges.
Place into a pan of boiling water for five minutes, then drain.
Place wedges into a bowl, pour over the olive oil and add the seasoning. Lightly toss the wedges until they are coated.
Spread out onto the baking tray and bake for approximately 20-25 minutes until golden.
Serve while still warm with sour cream or tomato salsa.
