Caramelised Baked Banana and Yoghurt Pudding

Here is a healthy pudding that the whole family is bound to love – and it’s the perfect way to use up those old bananas too!

 

Serves 4:

 

Ingredients: 

4 very ripe bananas (overripe ones are great for this)

80g light brown sugar

500g Greek yoghurt

Juice and zest of one lemon

 

Method:

Preheat oven to 180ºC/350ºF/Gas Mark 4.

Grease four ramekins and set aside.

Chop up bananas and place in a bowl with the yoghurt. Use an electric hand blender to mix them together until all lumps are gone.

Add 60g of the sugar along with the lemon juice and zest. Mix in thoroughly.

Divide the mixture between the four ramekins and place in the oven to bake for 10-15 minutes. The puddings will be ready when they are firm to the touch.

Once baked, remove the puddings from the oven and sprinkle with the remaining sugar. Place under a hot grill for 20-30 seconds until the sugar melts and hardens, forming a glaze on the top.

Serve immediately.
