This is a delicious alternative to toast or cereal for breakfast. In fact, it makes for a delicious treat at any time of the day!
Makes approximately 12 pancakes
Ingredients:
350g plain flour
50g sugar
2 very ripe bananas
2tsp baking powder
2 eggs
200ml milk
Butter or oil for frying
Method:
Sift flour and baking powder into a bowl. Stir in the sugar.
Mash the bananas in a separate bowl until no lumps remain. Add to the flour and sugar mixture and mix together well.
Beat the eggs together with the milk. Add to the dry ingredients and stir – don’t over stir – you want the mixture a little lumpy for best results!
Heat up the fat until very hot and add enough batter to form a pancake measuring approximately 4″. Cook for a minute or two until holes form on the top, the flip over to cook the other side. Transfer to a warm plate and serve immediately or cover with a clean tea towel until ready to serve.
Serve with a helping of fresh fruit and yoghurt.
